Nutrition Science

Food and nutrition is at the core of many health, economic, and environmental issues. Our nutrition science degree, offered on our St. Paul campus, focuses on innovative and collaborative experiences that will successfully prepare you for the ever-changing roles of food and health professionals.

Nutrition science is a flexible program that will encourage you to explore areas of interest that intersect with the nutrition profession. Complementary areas of study include, communication, economics, exercise science, and more. The nutrition science degree program provides you with personalized guidance to help determine the degree focus that will best meet your professional goals.

what can I do with a degree in Nutrition Science?

Nutrition science will prepare you for a variety of entry-level jobs in areas such as:

A major in nutrition science is excellent preparation for graduate studies in areas such as nutrition, food science, and public health. Or, it can be used as a stepping stone into advanced studies in fields like health communication or business. Nutrition science also provides a natural transition into medical, dental, or physician assistants programs.

what will I study?

In the nutrition science major, you’ll receive a solid foundation in biology, chemistry, biochemistry, and physiology. These science-based courses are a gateway into the advanced nutrition courses, while also meeting the necessary requirements for admission into graduate and professional programs.

The nutrition science curriculum includes many diverse courses that bring real-world experiences and opportunities into the classroom. For example,

  • Health Coaching provides exposure to a growing career field and culminates with the opportunity to obtain a nationally recognized coaching certification.
  • Food Systems and Policy offers a critical look into how food goes from seed to grocery store shelves. It evaluates the way nutrition policies and recommendations are set and how they may be influenced by our current food system.
  • Research Methods provides a unique research opportunity with interdisciplinary team-based learning from nursing, exercise science, and public health students.

Students in the nutrition science program may choose the opportunity to conduct original research with a professor or to work on an independent research project. All students are encouraged to present their work at local, regional, and national meetings or conferences.

  • Our 3+2 program allows students to graduate with a degree in Applied Nutrition and a Master’s degree in Public Health in just 5 years. The Master of Public Health in Global Health prepares students to reduce health disparities around the world.
